4th of July Dessert : American Flag Fruit Pizza

Ingredients:
Sugar Cookie Base

  • 1 cup unsalted butter

  • 1/2 cup honey

  • 1 egg

  • 1 tsp vanilla extract

  • 2 1/2 cups all purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

Toppings

  • 8 oz cream cheese softened

  • 1/4 cup honey

  • 1 teaspoon vanilla

  • 5-8 medium strawberries

  • 1/3 cup blueberries

Sugar Cookie Base Instructions:
Step 1: Start by creaming together the butter and 1/2 cup of honey for 2 minutes in a bowl.
Step 2: Add the egg and vanilla extract
Step 3: Scrape the sides of the bowl and mix in the flour, baking powder and salt.
Step 4: Mix until the dough comes together.
Step 5: Remove dough from bowl into plastic wrap and wrap dough. Place wrapped dough into the fridge for at least 1 hour ( or until semi firm)
Step 6: When you are ready to bake, lightly oil a 9x12 baking sheet pan and press dough into an even layer
Step 7: Bake at 350° for 12-15 minutes (or until corners are golden and the middle is cooked through *Tooth pick test*)
Step 8 Allow the cookie base to cool on the pan before apply the toppings

Topping Instructions:
Step 9: In a bowl, beat cream cheese, honey, and vanilla together until smooth.
Step 10: Remove the stem from the strawberries and cut the strawberry vertically into thin slices

Assemble:
Step 11: Scoop the cream cheese mixture on top of your cooled cookie crust base and spread evenly
Step 12: Use the blueberries to create the “blue” section of the American flag in the upper left corner
Step 13: Use the Strawberry slices to create 7 red stripes. Leaving space in between each red stripe for the white cream cheese to pop through.
Step 14: ENJOY!!

Tips:
- The cookie dough base can be made in advance. Uncooked cookie dough will be good for up to 3 days in the fridge.
- Add toppings on shortly before you serve to yourself or guests. The sugars in the cream cheese mixture will make the cut strawberries release water leaving you with a liquidy surprise.
